Everything Oats!

I swear I have been doing a TON of cooking recently, but unfortunately, I have NOT been doing a lot of writing.

Between full-time teaching, being a mommy (and I am excited to announce that we are growing as a family with another one on the way due in February), and trying to cook as much whole-food meals as possible...

Flour-less Cookies: Salted "Caramel" and Chocolate

I'm going to start with saying that my past experiences with any type of flour-less cookie has ended badly...very badly. Whether my flour-less cooking has ended in a soupy mess or a tasteless glop of unappetizing measures, I usually end up trashing the food and the recipe and moving on.

But this time...success. And more than success...I was literally licking the spoon, convinced that there was no way

Peanut Butter Chocolate Granola Bars

I swear that I started off making these thinking, "I really need some more healthy granola bar recipes." Mayan Coconut Iced "Cream"

You may have gathered that I have been trying to be more critical of the dairy that my family and I have been eating. As a result, I have found myself replacing cheeses and milk with some non-dairy options. My friend, Wendy, on her blog, Fit-and-Frugal, just posted a recipe for some Vegan Mayan Chocolate Coconut Iced "Cream" (which it appears she got from Swoon) and I just had to give it a try.

Homemade Nutty Granola Bars

In the not-so-distant past, I was an addict for a certain brand of "protein" bars. Never mind that they had a chocolate outer layer. Forget that the ingredient list had a slew of things I couldn't identify. Ignore the fact that I always seemed to have a crash about an hour after eating one.

"But they have like 20 grams of protein," I'd say to myself, searching the label to confirm that this was indeed true and wondering why I was so tired and already hungry again.

And then I listened to a nutritionist talk about sugar.

Almond Butter Cups

I recently attended a 1-year-old birthday party where the amazing mama had made some delicious frozen Sun Butter Chocolate Cups...that I am still hoping to get the recipe for.

In the meantime, I saw the recipe for Raw Almond Butter Cups from Oh She Glows and just had to give them a try.
